Colour Me Happy With A Fabulous Fruit Salad From St Ives Fruit Market

Wander through the aisles of St Ives Fruit Market at St Ives Shopping Centre and you are spoiled for choice with fresh and fabulous fruit and vegetables.
The once humble fruit salad has made a huge comeback with foodies. But creating the perfect fruit salad isn’t as easy as it looks. It’s all about construction and colour.
A colourful fruit salad doesn’t just look good, it’s good for you. Each colour in the food rainbow represents a unique set of vitamins and antioxidants.
Red -Watermelon, persimmons, guava, pink grapefruit
Most red fruit and vegetables are rich in an antioxidant called lycopene, a red-coloured carotenoid associated with a long list of health benefits such as protecting the skin from sun damage and decreasing the risks of heart disease and certain forms of cancer.
Blue – Blueberries, blackberries, plums, grapes
Blue and purple foods contain anthocyanins, known to improve cardiovascular health and prevent short-term memory loss. Researchers at Tufts University have found that blueberries may make brain cells respond better to incoming messages and might even spur the growth of new nerve cells.
Green – Grapes, kiwis, honeydew melon, Granny Smith apples
Green foods help strengthen bones, muscles, and brains, and are also rich sources of lutein and zeaxanthin, antioxidants that promotes healthy vision. Green fruits and vegetables get their colour from chlorophyll, which studies show plays an important role in stimulating the growth of new tissue and hindering the growth of bacteria.
Yellow/Orange – Cantaloupe, pineapple, peaches, apricots, oranges, bananas
Loaded with beta-carotene, the now-famous nutrient that contributes to immune health, improves communication between cells, and helps fight off cell-damaging free radicals, yellow and orange fruits pack a healthy punch.
Once you have chosen your fruits, cut them into varying sizes, and add a pinch of salt (yes, salt) as well as a squeeze of lime. And a sprinkle of chopped mint never goes astray.
